The combination of melted mozzarella, savory bacon, sweet onion, and fresh spinach makes each bite flavorful and satisfying, perfect for breakfast, brunch, or a quick snack.

How to Make It

Prepare the Ingredients

Cook the bacon until done but still soft and pliable. Drain on paper towels and cut into bite-size pieces. Slice the sweet onion thinly and prepare the baby spinach leaves.

Mix the Toppings

Place all the toppings in a bowl, add the seasonings, and toss to coat evenly.

Assemble the Tortilla

Brush the tortilla lightly with olive oil, leaving a border around the edge. Spread shredded mozzarella evenly over the tortilla, then top with the topping mixture. Sprinkle shredded Parmesan on top.

Bake

Bake at 400°F (205°C) for about 10 minutes, until the cheese is melted and the edges are golden brown.

Ingredients
  

Topping Mixture
  • 2 slices thick bacon
  • 1 cup baby spinach leaves
  • cup sweet onion sliced
  • ½ tsp garlic powder
  • 1 Tbsp extra virgin olive oil
  • Salt and pepper
For assembly
  • 1 flour tortilla 9-inch (or any flatbread)
  • ½ cup shredded mozzarella
  • ¼ cup shredded parmesan
  • 1 tsp extra virgin olive oil

Instructions

  • Cook the bacon until done but still soft, then chop.
  • Combine with sliced sweet onion and spinach seasoned with garlic powder, salt, and pepper.
  • Brush a tortilla lightly with olive oil, spread shredded mozzarella over it, then top with the bacon, onion, and spinach mixture and sprinkle with Parmesan.
  • Bake at 400°F for about 10 minutes until the cheese melts and the edges are golden.
