Rice Paper Omelet (Vietnamese Pizza-Style)

A Note on This Recipe

Bánh Tráng Nướng is a popular Vietnamese street food — grilled rice paper topped with egg, green onion, and various toppings, eaten crispy straight off the grill. This recipe is a quick stovetop version you can make at home in about 10 minutes.

The rice paper crisps up directly in a dry pan with no oil, which gives it a satisfying crunch that’s quite different from a regular omelet or wrap. Ham, cheddar, and a quick sweet chili sauce round it out into something that feels fun and a little unexpected for breakfast. It’s also a great way to use up rice papers if you have a pack sitting in the pantry.

How to Make It

Prep the Ingredients

Finely chop the green onion and cut the deli ham slices into thin strips.

Prep the Rice Paper Base

Heat a nonstick pan over medium heat without oil and place a sheet of rice paper. Add the green onion and make a well in the center.

Note: Use dry rice paper on a dry pan—no oil is needed. This gives the base a crispy texture while cooking. It will absorb all the moisture it needs from the toppings, so wetting it first will make it soft during cooking and rubbery as it cools.

Cook the Egg on Rice Paper

Crack an egg into the well and stir in a circular motion to combine with the green onion. Spread the mixture evenly across the rice paper with the back of a spatula.

Add Topping

When the egg is still slightly moist on top, sprinkle the ham and cheese evenly across the surface. Continue cooking until the rice paper is crispy and golden on the bottom.

Fold and Serve

Gently fold in half using a spatula, being careful not to crack it. Drizzle with sweet chili sauce before folding or serve it on the side for dipping.

Make the Sweet Chili Sauce (Optional)

Add all ingredients except the cornstarch to a microwave-safe cup and stir to combine. Cover with a lid that allows steam to escape and microwave for 30 seconds.

While still hot, stir in the cornstarch mixture and microwave for 15 more seconds. Remove and let cool.

  • 1 rice paper
  • 1 egg
  • 1 green onion stalk

Quick sweet chili sauce
  • 1 Tbsp sriracha sauce
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 1 Tbsp water
  • 1 tsp honey or sugar
  • ¼ tsp soy sauce
  • ½ tsp cornstarch dissolved in 1 tsp water for thickening

Instructions

  • Heat a nonstick skillet over medium heat and place a dry sheet of rice paper in the pan.
  • Crack an egg onto the rice paper, mix with green onion, and spread evenly.
  • Add ham and cheddar, then cook until the base is golden and crisp.
  • Fold in half and serve immediately with sweet chili sauce, if desired.
