Got some rice papers lying around? Take your everyday eggs up a notch with this quick and easy recipe.

Inspired by Bánh Tráng Nướng, a popular Vietnamese street food, this simple dish is made with just rice paper, eggs, and a few toppings. The grilled rice paper adds a satisfying crunch, while the quick sweet chili sauce brightens up and balances out the flavors.

How to Make It

Prep the Ingredients

Finely chop the green onion and cut the deli ham slices into thin strips.

Cook the Egg on Rice Paper

Heat a nonstick pan over medium heat without oil and place a sheet of rice paper. Add the green onion and make a well in the center. Crack an egg into the well and stir in a circular motion to combine with the onion. Spread the mixture evenly across the rice paper with the back of a spatula.

Note: Use dry rice paper on a dry pan—no oil is needed. This gives the base a crispy texture while cooking. Wetting the rice paper first can make it soft while cooking and rubbery as it cools.

Add Topping and Fold

When the egg is still slightly moist, sprinkle the ham and cheese evenly. Cook until the rice paper is crispy and golden on the bottom. Gently fold in half, being careful not to break it. Drizzle sweet chili sauce before folding or serve on the side.

Make the Sweet Chili Sauce (Optional)

Add all ingredients except the cornstarch to a microwave-safe cup and stir to combine. Cover with a lid that allows steam to escape and microwave for 30 seconds. While still hot, stir in the cornstarch mixture and microwave for 15 more seconds. Remove and let cool.

Ingredients
  

  • 1 rice paper
  • 1 egg
  • 1 green onion stalk
  • 1-2 deli ham slices
  • ¼ cup shredded cheddar cheese
  • Salt and pepper
Quick sweet chili sauce
  • 1 Tbsp sriracha sauce
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 1 Tbsp water
  • 1 tsp honey or sugar
  • ¼ tsp soy sauce
  • ½ tsp cornstarch dissolved in 1 tsp water for thickening

Instructions

  1. Heat a nonstick skillet over medium heat and place a dry sheet of rice paper in the pan.
  2. Crack an egg onto the rice paper, mix with green onion, and spread evenly.
  3. Add ham and cheddar, then cook until the base is golden and crisp.
  4. Fold in half and serve immediately with sweet chili sauce, if desired.

Notes

Use a dry pan without oil — the rice paper softens and crisps as it cooks directly with the egg. Serve immediately for the best crunchy texture, as the rice paper becomes chewy once it cools.
