- 2 slices white sandwich bread
- Persian cucumber (or English cucumber)
- Fresh dill leaves
- Freshly ground black pepper
spread:
- 4 Tbsp plain cream cheese spread or whipped cream cheese (equals ¼ cup)
- 2 tsp mayonnaise
- ½ tsp onion powder

Slice the Persian cucumber into thin rounds. No need to peel or seed–they have smooth, thin skin and tender seeds.

Add all the ingredients for the spread in a bowl, and mix well until smooth and blended.

assembly
Spread a thick layer of the cream cheese mixture on both slices of bread. It will help prevent them from getting soggy. Then place the cucumber slices on one side of the bread, and sprinkle fresh dill over the cucumber. Finish with freshly ground black pepper.
Place the other slice of bread on top and cut it in half lengthwise or diagonally.
