Gourmet Avocado Toast 3 Ways

Mediterranean Avocado Toast

  • Avocado
  • Salami
  • Persian or English cucumber
  • Green olives
  • Crumbled feta cheese
  • Extra virgin olive oil
  • Salt and pepper
  • Ciabatta, campagne, or any rustic artisan bread

Slice the cucumber into thin rounds. Halve the avocado lengthwise, then cut crosswise into thick slices. Cut the salami into half-moons and slice the olives.

On the toasted bread, arrange the avocado, salami, and cucumber in a layer and repeat. Top with olives and feta cheese. Finish with freshly ground pepper and a drizzle of olive oil (no salt is necessary).


Smoked Salmon Avocado Toast

  • Smoked salmon
  • Red onion
  • Crumbled feta cheese
  • Lemon juice
  • Extra virgin olive oil

Cut the red onion into thin slices and the smoked salmon into wide strips.

Toast a slice of bread. Halve the avocado and roughly chop the flesh inside the skin. Then scoop the flesh onto the toasted bread and mash with a fork. Season lightly with salt and pepper.

Then arrange smoked salmon slices and top with red onion. Squeeze a lemon wedge over the salmon and grind more pepper. Finish with a sprinkle of feta cheese and a drizzle of olive oil.


Avocado caprese Toast

  • Fresh basil leaves
  • Shredded parmesan cheese
  • Balsamic glaze
  • Extra virgin olive oil
  • Salt and pepper

Slice the tomato and avocado into about the same shape and thickness. Wash and pat dry the basil leaves.

On the toasted bread, arrange alternating avocado, tomato, and basil leaves. Season with salt and pepper and sprinkle with parmesan cheese. Finish with a drizzle of olive oil and balsamic glaze.

TIP: If you don’t have a balsamic glaze, you can make your own with balsamic vinegar in the microwave or on the stovetop.
