3 Microwave Fluffy Egg Bites (Mug Omelets)

Fluffy, soft, and ready in minutes — these microwave egg bites are nothing like the rubbery mug eggs you might expect. Choose from mushroom and Parmesan, spinach and feta, or bell pepper and cheddar for a quick, satisfying breakfast with barely any cleanup.

Mushroom & Parmesan Mug Omelet
  • 2 small eggs
  • 1 tbsp half-and-half
  • A pinch of garlic powder
  • Salt and pepper
  • 2 tbsp cremini mushroom finely chopped
  • 1 tbsp shredded parmesan
Spinach & Feta Mug Omelet
  • 2 small eggs
  • 1 tbsp half-and-half
  • A pinch of onion powder
  • Salt and pepper
  • 2 tbsp baby spinach leaves finely chopped
  • 1 tbsp crumbled feta cheese
Bell Pepper & Cheddar Mug Omelet
  • 2 small eggs
  • 1 tbsp half-and-half
  • A pinch of onion powder
  • Salt and pepper
  • 2 tbsp bell pepper finely chopped
  • 1 tbsp shredded cheddar

Instructions

Mushroom & Parmesan Mug Omelet
  • Grease a small microwave-safe cup with nonstick spray or butter.
  • Crack in the eggs, add the half-and-half, garlic powder, salt, and pepper, and beat until light and smooth.
  • Finely dice the mushrooms, stir into the egg mixture along with the Parmesan.
  • Microwave uncovered for 30 seconds, then 30 seconds, then 10 seconds, or until set.
Spinach & Feta Mug Omelet
  • Grease a small microwave-safe cup with nonstick spray or butter.
  • Crack in the eggs, add the half-and-half, onion powder, salt, and pepper, and beat until light and smooth.
  • Tear the spinach into small pieces and stir into the egg mixture along with the feta.
  • Microwave uncovered for 30 seconds, then 30 seconds, then 10 seconds, or until set.
Bell Pepper & Cheddar Mug Omelet
  • Grease a small microwave-safe cup with nonstick spray or butter.
  • Crack in the eggs, add the half-and-half, onion powder, salt, and pepper, and beat until light and smooth.

Notes

Use a small cup — about 5 oz — so the eggs puff up properly rather than spreading out too thin. Microwave wattages vary, so check at the 1-minute mark and add the final 10 seconds only if needed.
