3-Topping Tortilla Pizza: Bacon, Spinach & Onion

Looking to switch up your breakfast routine using tortillas? Try making a homemade breakfast pizza that’s quick and easy to prepare in just 10 minutes. To achieve a crispy crust, opt for toppings with low moisture and season them with a light dressing of extra virgin olive oil, salt, and pepper before cooking.

ingredients

topping mixture:
  • 2 strips thick bacon
  • 1 cup baby spinach leaves
  • ⅓ cup sweet onion, sliced
  • ½ tsp garlic powder
  • 1 Tbsp extra virgin olive oil
  • Salt and pepper

  • 1 flour tortilla, 9-inch (or any flatbread)
  • ½ cup shredded mozzarella
  • ¼ cup shredded parmesan
  • 1 tsp extra virgin olive oil

Cook the bacon in the microwave or your preferred method until almost fully cooked but still soft. Remove from the microwave, let drain on paper towels, and cut into bite-size pieces.

Cut the sweet onion into pretty thin slices. Pack the spinach leaves in a cup.

Place all the toppings in a bowl. Add the seasonings and toss to evenly coat and distribute the ingredients.

Remove the rack from the toaster oven and preheat to 420°F (215°C). Line the toaster oven rack with parchment paper and place a tortilla.

Brush the tortilla with olive oil, leaving a border around the edge. Spread shredded mozzarella and add the topping mixture evenly over the cheese. Sprinkle shredded parmesan on top. If desired, make a well in the center and crack an egg into it.

Place the rack on the middle or lower slot. Bake at 420°F (215°C) for 10 minutes or until the cheese is melted and the edges are golden brown.
