You’d be surprised at how delicious microwave mac and cheese can be with these recipes! Instead of making a roux from scratch, heavy cream is used to create a creamy texture. These dishes are individually portioned and make great breakfasts, snacks, or sides. Plus, they’re made with pantry staples and can be made in less than 10 minutes.
Basic Mac & Cheese

- ½ cup elbow pasta (macaroni)
- ½ cup water
- 1 tsp unsalted butter
- ⅓ cup shredded cheddar cheese (preferably sharp cheddar)
- ¼ cup heavy cream
- Salt and pepper
- Parsley for garnish

step 1
Add the macaroni and water to a microwave-safe mug (use a large mug or bowl to avoid overflow). Add a pinch of salt and give it a stir.
Cook in the microwave for about 4 minutes. The pasta absorbs all the water, and there is no need to drain it. While still hot, add butter and stir to coat the macaroni.

step 2
Add the cream and cheese, and season with salt and pepper. Mix to distribute and cover with a lid that has a steam vent.
Place back in the microwave and cook for an additional 2 minutes. Remove from the microwave and stir to combine. Sprinkle with parsley and serve.
Tomato Mac & Cheese

- 1 tsp tomato paste
