These fluffy egg bites are a protein-packed, savory breakfast made with eggs, cheese, and bacon, baked until light and fluffy—perfect for meal prep or a quick grab-and-go bite.

Ingredients
  

Egg Mixture
  • 6 eggs
  • ¼ cup heavy cream
  • ¼ cup grated parmesan cheese
  • A pinch of salt
  • Freshly ground pepper
For the Fillings
  • 3-4 slices bacon cooked and chopped
  • 2 stalks green onion chopped
  • Shredded cheddar cheese
For Assembly
  • Unsalted butter for greasing the pan

Instructions

  1. Cook the bacon until fully done, then chop it with the green onions. Whisk the eggs, parmesan, cream, salt, and pepper until light and slightly frothy. Grease a muffin tin, layer cheese, bacon, and green onions in each cup, then pour in the egg mixture. Bake at 365°F for about 20 minutes until set and lightly golden. Let cool slightly before removing and serving.
