Easy Cafe-Style Grilled Cheese

A cafe-style grilled cheese with creamy brie, sharp cheddar, and sun-dried tomatoes on crisp, golden ciabatta. Rich, savory, and no more effort than the classic.
Yield: 1 serving
Total Time: 10 minutes

Ingredients

  • 2 slices ciabatta
  • Brie
  • Sharp cheddar slices
  • Sun-dried tomatoes dry-packed, chopped
  • Extra virgin olive oil

Instructions

  • Spread brie on one slice of ciabatta, scatter the sun-dried tomatoes over it, and top with a slice of sharp cheddar.
  • Heat a pan over medium heat and add a good drizzle of olive oil. Once the oil is shimmering, add the sandwich and cook until the bottom is deep golden brown and crisp.
  • If the pan looks dry, add a small drizzle of oil, then flip the sandwich once. Cook until the cheese is fully melted and the bread is equally golden. If the bread browns faster than the cheese melts, turn the heat down a little.
  • Cut the sandwich in half before serving so the steam escapes and the middle doesn't go soggy.

Notes

  • Timing varies with the bread and your pan, so go by color and melt rather than the clock.
  • Trim most of the brie rind for a creamier melt. A little left on is fine.
  • Oil-packed sun-dried tomatoes work too. Drain them and pat them dry. If yours are very firm, soak them in warm water until softened, then drain and chop.
  • Amounts are flexible, so adjust to the size of your bread.
