ingredients
EGG MIXTURE:
- 2 large eggs
- ½ tsp fish sauce
- ½ cup canola oil (or any vegetable oil with high smoke point)
Quick Sweet Chili Sauce:
- 2 Tbsp sambal oelek (or sriracha sauce)
- ½ tsp soy sauce (or fish sauce)
- 1 tsp honey (or syrup)
- 1 Tbsp lime juice
Serving:
- ½ cup cooked rice
- Cilantro or basil leaves, for garnish

Sweet Chili Sauce
Combine all sauce ingredients in a bowl and whisk until smooth.
Note: If you have access to Prik Nam Pla or Nam Chim Kai, either would be fantastic additions to this dish. These Thai sauces typically combine sweet, salty, and spicy flavors, complementing the dish beautifully. For a quick substitution, simply use a store-bought chili sauce like sambal oelek or sriracha sauce. To elevate the flavor, whisk in a few additional ingredients.

Eggs
Step 1: Beat the eggs in a bowl until smooth and slightly frothy. Heat a deep skillet or wok over medium-high heat. Once hot enough to sizzle a drop of water, add the oil. Heat the oil until hot but not smoking.
Step 2: Pour the egg mixture evenly into the hot oil. It should sizzle and set slightly around the edges immediately. Cook undisturbed for about 30 seconds, or until the bottom is golden brown. You can gently lift an edge with a spatula to peek underneath.
Step 3: Flip the egg carefully using tongs or a spatula. Cook for another 20-30 seconds, or until the desired level of doneness is reached. Transfer the egg to a paper towel-lined plate to drain any excess oil.

Assembly
Spoon warm rice into a serving bowl and drape the omelet over it. Drizzle the sweet chili sauce over the omelet or serve it on the side. Garnish with fresh cilantro or basil leaves.
