Suppose you have some bread and Greek yogurt in your fridge that you don’t want to eat anymore. I have a recipe that can turn them into a warm bread pudding that is delightful. For the best taste, it is recommended that you use buttery or milk bread and full-fat Greek yogurt. The secret to enhancing the flavor is to mix melted butter into the batter. If you want a more indulgent version, you can add heavy cream and decrease the amount of yogurt. You can also experiment with toppings, such as canned fruit or fruit preserves.

ingredients
- 1 thick slice of challah bread (or 2 slices of regular sandwich bread)
- (optional) blueberries for topping
Custard:
- 1 egg
- ⅓ cup plain Greek yogurt (preferably made with whole milk)
- 1 Tbsp sugar
- ¼ tsp vanilla extract
- A tiny pinch of salt
- 1 Tbsp unsalted butter, melted

Custard
Beat the egg until light and smooth. Add the rest of the custard ingredients except butter and mix until thoroughly combined. Melt the butter in the microwave and let cool slightly. Whisk it into the mixture.
Bread
Chop or tear the bread into bite-size pieces. Spread in a single layer on a baking dish (9 x 5 x 1.5).

Combine
Pour the custard mixture over the bread pieces. Gently press down the bread pieces so that they are soaked in the custard.
Toppings
Top with blueberries or your favorite fruit. You can also top with fresh fruit after baking.
Cooking
Preheat the toaster oven to 365°F (185°C). Bake for 18 to 20 minutes, or until the custard is set and the bread is golden brown on the edges. If necessary, insert a fork or toothpick into the center to test for doneness. Let cool for a few minutes before serving.
