Rice Paper Omelet (Vietnamese Pizza-Inspired)

Got some rice papers lying around? Take your everyday eggs up a notch with this quick and easy recipe. Inspired by Bánh Tráng Nướng, a popular Vietnamese street food, this simple dish is made with just rice paper, eggs, and a few toppings. The grilled rice paper adds a satisfying crunch, while the quick sweet chili sauce brightens up and balances out the flavors.

ingredients

  • 1 rice paper
  • 1 egg
  • 1 green onion stalk
  • 1-2 deli ham slices
  • ¼ cup shredded cheddar cheese
  • Salt and pepper
1-min sweet chili sauce:
  • 1 Tbsp sriracha sauce
  • 1 Tbsp honey (or 2 tsp sugar)
  • 1 Tbsp rice vinegar (or apple cider vinegar)
  • ¼ tsp soy sauce
  • 1 Tbsp water
  • ½ tsp cornstarch dissolved in 1 tsp water (for thickening)

(This step is optional – you can use a store-bought sweet chili sauce)

Add all the ingredients except cornstarch to a microwave-safe cup and stir to combine. Cover with a lid that allows steam to escape and microwave for 30 seconds.

While still hot, add a starch mixture to the sauce and combine. Microwave for 15 seconds with a lid on. Remove from the microwave and let cool.

Finely chop the green onion and cut the deli ham slices into thin strips.

Heat a nonstick pan over medium heat without oil and place a sheet of rice paper.

Add the green onion and make a well in the center. Crack an egg into the well and mix the egg and green onion in a circular motion. Spread the mixture across the rice paper using the back of the spatula.

When the egg is still slightly moist, sprinkle the ham and cheese evenly. Cook until the rice paper is crispy and golden brown on the bottom over medium heat.

Gently fold it over in half; be careful not to break it. You can drizzle the sweet chili sauce before folding or serve on the side.

Note: Make one at a time and serve immediately while the rice paper is still crispy.
