ingredients

  • 1-2 eggs
  • 1 cup cremini mushrooms, thinly sliced
  • 1 Tbsp parsley, finely chopped
  • ¼ cup shredded parmesan
  • ¼ cup heavy cream
  • 1 Tbsp unsalted butter, melted
  • 1 tsp garlic powder

directions

Prep

Pull the stems off the mushrooms and cut the caps into thin slices. Finely chop fresh parsley leaves.

Preheat the toaster oven to 400°F (205°C).

Mushroom mixture & assembly

Add the mushroom to a bowl and season with salt and pepper. Stir in melted butter to coat the mushroom. Then, add the rest of the ingredients (except eggs) and mix until evenly combined.

Transfer the mixture to the oven dish (or start with an oven-safe dish), and make a well in the center. Crack an egg into the well and lightly season with salt and pepper.

Bake

Bake at 400˚F (205°C) for 15 minutes until the white is set and the yolk is still runny–Adjust the cooking time depending on how you like your eggs done.

While waiting, toast some ciabatta or baguette slices in a pan. Remove the dish from the toaster oven and finish with a sprinkle of parsley. Serve with toast.
