- 1 hot Italian sausage link (or chorizo)
- ½ cup bell pepper, chopped
- ½ cup sweet onion, chopped
- ¼ cup fresh chive, chopped
- 1 Tbsp unsalted butter
- Shredded cheese for topping (optional)
egg mixture:
- 4-5 eggs
- ¼ cup half-and-half
- ¼ cup grated parmesan cheese
- A pinch of salt
- Freshly ground pepper

Beat the eggs with the ingredients of the egg mixture until light and frothy.

Dice the onion and bell pepper into cubes or thin strips. Finely chop the chives.

Place a nonstick pan over medium heat without oil and add the sausage, cutting it into small pieces with shears. Break the sausage into smaller pieces as it cooks until no red parts are visible.
Add the vegetables and stir together with the sausage. The fat from the sausage is enough to cook the vegetables, and no oil is needed. Cook until the sausage is browned and the vegetables are softened.

Reduce the heat to medium-low and add the butter. Let it melt and coat the pan. Pour the egg mixture into the pan and gently stir to distribute the ingredients evenly. Sprinkle generously with chives and add more cheese on top, if desired.
Cover with a lid and cook for 15 minutes or until the bottom is golden brown and the top is just set. It should be light, fluffy inside and golden brown on the edges and bottom.
