Looking for a warm, savory brunch that’s quick and easy? Look no further than Italian-style baked eggs in tomato sauce. This single-serve shortcut baked eggs recipe is put together in no time but tastes surprisingly complex and has a depth of flavor. That’s all thanks to the secret ingredient—pizza sauce. It is thicker and has a more intense flavor than regular tomato sauce, and it does the trick nicely.

directions

tomato mixture
Preheat the toaster oven to 400˚F (200°C). Cut the cherry tomatoes in half and tear the basil leaves into pieces. In a shallow oven-safe dish, add all the ingredients (except the eggs) and mix them together to combine.

assembly
Spread the mixture evenly and make two wells in the center. Crack an egg into each well and sprinkle the eggs with salt and pepper. Top with more parmesan cheese if desired.

cooking
Bake at 400˚F (200°C) for about 15 minutes or until the whites are set, and the yolks are still runny. Adjust the cooking time depending on how you like your eggs cooked.
While waiting, toast some ciabatta or baguette slices in a pan. Then, remove the dish from the toaster oven and serve it with the toast.
